Lamb is a very
under appreciated meat, especially considering its delicate flavour
and tender flesh.The cut and colour you will receive depends
primarily on the age of the joint. Most cuts come in the following
ages:
- 6-8 weeks old -
these offer the palest cuts, though are arguably not the most
humane considering the age of the lamb
- 3-5 months
– this is the most common of lamb cuts and is
often referred to as 'spring lamb'
- 1-2 years - is
referred to as 'hoggart' and has a much stronger
flavour.
